Visit of the dairy with tasting DURATION: 90 minutes An expert guide accompanied guests, young and old, on the journey of milk processing. The visit includes a theoretical and practical presentation for each production phase of the Torre Sant 'Emiliano cheese, from land cultivation, to grazing, milking, to fresh processing and preservation of the aged. The visit concludes with the tasting of deiforms: from the fresh ones like ricotta, first salt and giuncata, to the semi-seasoned ones like shepherds, caciotta, moretto, autigne, pecorino, pecorino di campo, pecorino confidential and Don Alberto. These are usually accompanied by honey, jams, salted sauces, patées wines produced by the best farms in the area.
